Sautéed Bok Choy

Ingredients

1 head bok choy 

1 cup julienned carrots

2 tsp olive oil

3 garlic cloves

1 tbsp minced fresh ginger

Pinch sea salt 

3 tbsp water or vegetable broth

Directions

  • Wash boy choy and cut the leaves away from the stalks. Thinly slice the stalks and set aside. Slice or chop the leaves and set aside. 
  • Julienne the carrots- set aside. 
  • Heat olive oil in pan over medium heat. Add Garlic and ginger for 15 seconds, add bok choy stalks, carrots, and salt. stir for 1 minute.
  •  Add the greens and 2-3 tbsp water or broth to create a little steam, cover and cook for 2 minutes or until greens have wilted. 
  • Serve immediately.
